  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped (or crab meat)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon Old Bay seasoning
  • Optional: chopped green onions, for garnish

Instructions

  1. Start by preheating your oven to 400°F (200°C).
  2. Wash and dry your russet potatoes. Pierce each potato several times with a fork to allow steam to escape. Place them directly on the oven rack and bake for 45-60 minutes, until tender.
  3. While the potatoes are baking, combine the chopped shrimp, cream cheese, cheddar cheese, and Old Bay seasoning in a mixing bowl. Stir until well blended.
  4. Once the potatoes are done, remove them from the oven and let them cool for 5-10 minutes. Carefully slice each potato in half lengthwise and scoop out the insides, leaving a thin layer of potato intact to maintain the skin’s structure.

  6. Fill each potato skin with the seafood filling, packing it generously.
  7. Place the stuffed potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, until the tops are golden and the filling is heated through.
