Description
A delicious and healthy honey lime chicken recipe served with jasmine rice and fresh avocado.
Ingredients

- 1 lb boneless skinless chicken breasts
- 1/4 cup fresh lime juice
- 3 tbsp honey
- 2 garlic cloves, minced
- 2 ripe avocados, sliced
- 1 cup jasmine rice
- 1/4 cup fresh cilantro, chopped
- Salt & pepper to taste
Instructions
- Marinate the chicken by mixing lime juice, honey, garlic, salt, and pepper in a bowl. Coat the chicken well and refrigerate for at least 30 minutes.
- Rinse jasmine rice under cold water until clear. Combine rice with 2 cups water in a pot; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until fluffy.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear marinated chicken for 4-5 minutes on each side until golden brown.
- Preheat oven to 375°F (190°C). Pour remaining marinade over chicken and bake for 15-20 minutes until cooked through.
- Slice avocados while the chicken bakes.
- To assemble: Start with jasmine rice on the plate, layer with honey-lime chicken slices and avocado pieces. Top with chopped cilantro.
