Description

A deliciously sweet and creamy dessert made with white chocolate and fresh mango puree.

Ingredients

Scale
  • 200g white chocolate
  • 150g fresh mango puree
  • 50ml heavy cream
  • 25g unsalted butter
  • 100g crushed cookies or graham crackers
  • A pinch of salt
  • 100g white chocolate chips (for coating)
  • Finely chopped nuts or cookie crumbs (for garnish)

Instructions

  1. Prepare the Mango Filling:
    • In a saucepan over low heat, combine the mango puree, heavy cream, and a pinch of salt.
    • Stir until the mixture is smooth and well combined.
  2. Incorporate Chocolate:
    • Break the white chocolate into small pieces and add it to the saucepan.
    • Stir until fully melted and the mixture is smooth.
  3. Add Butter:
    • Remove the saucepan from heat and add the unsalted butter.
    • Stir until the butter is completely melted and the mixture is glossy.
  4. Chill the Mixture:
    • Pour the mixture into a shallow dish, cover, and refrigerate for at least 2 hours, or until firm.
  5. Form Truffles:
    • Once firm, scoop small amounts of the mixture and roll into balls (about the size of a tablespoon).
    • Roll each ball in the crushed cookies or graham crackers for an additional layer of texture.
  6. Coat with White Chocolate:
    • Melt the white chocolate chips in a microwave or double boiler.
    • Dip each truffle ball in the melted white chocolate, ensuring it’s fully coated.
    • Place the truffles on a lined baking sheet.
  7. Garnish:
    • Before the chocolate sets, sprinkle with finely chopped nuts or cookie crumbs.
  8. Chill Again:
    • Refrigerate the truffles until the chocolate coating is set, about 30 minutes.

Notes

  • Use ripe, sweet mangoes for the best flavor in your puree.
  • Ensure all utensils and bowls are dry before use to prevent chocolate from seizing.
  • For a twist, add a splash of lime juice to the mango puree for added tanginess.
  • These truffles should be stored in the refrigerator and consumed within a week for optimal freshness.
