Description

Ingredients

  • 1 cup rolled oats
  • 1 cup coconut milk
  • 1 cup water
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut
  • 1/4 cup chopped almonds
  • 1/2 cup mixed berries

Instructions

  1. In a medium saucepan, combine rolled oats, coconut milk, water, and salt. Bring to a simmer over medium heat.
  2. Reduce heat to low and cook for 10-15 minutes, stirring occasionally, until oats are creamy and tender.
  3. Remove from heat and stir in maple syrup and vanilla extract.
  4. Serve warm, topped with shredded coconut, chopped almonds, and mixed berries.
