Description

A delicious and fluffy strawberry milkshake flavored bundt cake topped with a sweet glaze.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup strawberry milk (store-bought or homemade)
  • 3 tablespoons strawberry gelatin powder
  • 1 ½ cups powdered sugar
  • 23 tablespoons strawberry milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C). Generously grease and flour a bundt pan, making sure every crevice is covered to prevent sticking.
  2. In a large mixing bowl, use a stand mixer or hand mixer to cream the softened butter and granulated sugar together until light and fluffy—about 4–5 minutes.
  3. Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. With your mixer on low, alternate adding the dry mixture and strawberry milk to the creamed butter mixture. Start and end with the dry ingredients. Mix until just combined—be careful not to overmix.
  6. Fold in the strawberry gelatin powder.
  7. Pour the batter evenly into your prepared bundt pan and smooth the top. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 15 minutes. Then turn it out onto a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar, strawberry milk, and vanilla extract until smooth.
  10. Once the cake is completely cool, drizzle the glaze over the top. Let it set for about 15 minutes before slicing.
