Description

This slow cooker lemon chicken dish features tender chicken breasts cooked with fresh green beans and red skin potatoes, all infused with a bright lemon flavor.


Ingredients

Scale
  • 1 pound boneless skinless chicken breasts (trimmed)
  • 1/2 pound fresh green beans (trimmed)
  • 1 pound red skin potatoes (cubed)
  • 1/3 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon Montreal chicken seasoning
  • 1 teaspoon lemon pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 2 cloves minced garlic (or 1 teaspoon minced garlic)
  • 3 tablespoons salted butter (optional)

Instructions

  1. In a medium bowl, add the lemon juice, olive oil, chicken seasoning, lemon pepper, salt, pepper, onion powder, and minced garlic. Whisk together.
  2. To one side of the slow cooker, pile in the diced potatoes.
  3. On the other side, pile in the green beans.
  4. Drizzle 3 tablespoons of melted butter (either salted or salt it yourself) over the potatoes and green beans.
  5. Layer the chicken breasts in the center.
  6. Pour the lemon juice mixture evenly over the chicken, potatoes, and green beans.
  7. Cover and cook on HIGH for 3-4 hours or LOW for 4-6 hours without opening the lid.

Notes

  • This recipe can be made with either salted or unsalted butter, depending on your preference.
  • Feel free to substitute chicken breasts with thighs for a richer flavor.
