Description

Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 bunch fresh asparagus spears
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 3 cloves garlic (minced)
  • 1 whole lemon (for fresh juice)

Instructions

  1. Preheat your oven to 220°C (430°F) and line your large sheet pan with parchment or lightly oil it for easy cleanup.
  2. Pat the chicken thighs dry with paper towels, then rub them with a tablespoon of olive oil, salt, and pepper. Place them skin-side up on one side of the prepared sheet pan.
  3. Trim the asparagus spears to fit the pan, then toss them with a tablespoon of olive oil, minced garlic, salt, and pepper. Spread them evenly on the other side of the pan, making sure the spears are in a single layer for even roasting.
  4. Mince the garlic cloves and sprinkle them over the chicken and asparagus, focusing on the chicken skin and the tips of the asparagus. Drizzle a little more olive oil over the vegetables if needed.
  5. Slide the sheet pan into the oven and roast for 25 to 30 minutes. The chicken skin should turn golden and crispy, and the internal temperature should reach 75°C (165°F). The asparagus tips should be tender and slightly charred.
  6. At around the 15-minute mark, check on the garlic. If it’s browning too fast, cover the pan loosely with foil to prevent burning. You can also rotate the pan for even browning.
  7. Once the chicken skin is crispy and the internal temperature is right, turn on the broiler for 2-3 minutes to enhance the crispiness if desired. Keep a close eye to avoid charring.
  8. Remove the pan from the oven and let the chicken rest for 5 minutes. Squeeze fresh lemon juice over both the chicken and asparagus to add brightness and balance the smoky, caramelized flavors.
  9. Garnish with fresh herbs if using, then serve the chicken thighs and asparagus hot right from the pan for a beautifully caramelized, smoky dish with crispy edges and tender bites.
