Taco Chicken Skillet

Description

A delicious and easy taco chicken skillet with black beans, corn, and melted cheese.


Ingredients

Scale
  • 1 1/2 pound chicken breasts
  • 2 Tablespoons taco seasoning
  • 2 Tablespoons oil (divided)
  • 1/2 onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup corn kernels
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can petite diced tomatoes
  • 1 4 oz can diced green chiles
  • 1 1/2 cups shredded Mexican Cheese Blend
  • Fresh cilantro (optional garnish)

Instructions

  1. Season both sides of the chicken with taco seasoning.
  2. Heat 1 Tablespoon of the oil in a large skillet over a high heat. Add the chicken and cook for about 4-5 minutes per side, until it is browned and mostly cooked through. Remove from the pan, cover and keep warm.
  3. After you remove the chicken, reduce the heat to medium, add the rest of the oil to the skillet. Add the onions and cook for about 5 minutes until the onions are soft. Add the garlic and cook for just about 1 minute, you want to just start to smell it.
  4. Pour in the black beans, corn, tomatoes, and green chiles. Stir everything together and cook for about 5 minutes.
  5. Add the chicken back to the pan, nestling in with the black bean mixture. Simmer the chicken for 6-7 minutes, until it is cooked through (internal temperature 165º F).
  6. Once the chicken is cooked through, top with the cheese, put a lid on the skillet and cook for a few minutes until the cheese is melted.
  7. To serve, top with fresh cilantro if desired.
