Instructions
- Prepare the Crust: Preheat your oven to 325°F (163°C). Mix the graham cracker crumbs with melted butter in a bowl until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let it cool.
- Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually mix in the granulated sugar and vanilla extract. Beat in the eggs one at a time, ensuring each is thoroughly mixed before adding the next. Stir in the sour cream, milk, and cornstarch until the mixture is smooth.
- Color the Filling: Divide the cheesecake batter equally into three bowls. Add a few drops of pink food coloring to one bowl, blue to the second bowl, and leave the third one plain. Mix each bowl until the color is evenly distributed.
- Layer the Cheesecake: Pour the plain cheesecake batter over the cooled crust and spread evenly. Gently spoon the pink batter over the plain layer. Finally, add the blue layer on top, careful not to mix the colors.
- Bake the Cheesecake: Place the springform pan in a larger baking dish, and fill the larger dish with hot water halfway up the sides (creating a water bath). Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open.
- Chill and Decorate: Once completely cooled, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with whipped cream and decorate with pieces of cotton candy.
