- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt

- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder
- 1/2 small yellow onion, finely minced
- 1 tablespoon sugar (optional)
- 1 large egg, lightly beaten
- 3/4 cup buttermilk or dairy-free alternative with 1 tsp lemon juice
- 1 tablespoon melted butter or oil
- Oil for frying (vegetable, canola, or peanut oil)
Instructions
- In a mixing bowl, combine cornmeal, gluten-free flour, baking powder, baking soda, salt, pepper, garlic powder, and onion powder.
- Add minced onion and sugar (if using), then mix thoroughly to distribute evenly.
- In a separate bowl, whisk the egg, buttermilk, and melted butter or oil.
- Pour wet ingredients into the dry and stir until just combined; batter should be thick and scoopable.
- Let the batter rest for 5–10 minutes to fully hydrate.
- Heat 2 inches of oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Use a small cookie scoop or spoon to drop batter into the oil in batches.
- Fry for 2–3 minutes, turning until golden brown and crisp.
- Remove and drain on paper towels before serving hot with your favorite dip.
