Delicious no-bake cookies made with peanut butter and oats.

- 8 tablespoons unsalted butter
- 1 ½ cups granulated sugar
- ½ cup whole milk
- 1 cup creamy peanut butter (use a regular processed variety, not natural)
- 1 tablespoon pure vanilla extract
- 3 cups old-fashioned oats (quick oats also work)
Instructions
- Line a baking sheet with parchment paper or a silicone mat and set aside.
- In a medium saucepan, combine the butter, sugar, and milk. Stir continuously over medium heat until the butter has melted and the mixture comes to a full boil.
- Once boiling, continue cooking for about 1 to 1½ minutes, or until the temperature reaches 220–225°F (104–107°C) on a candy thermometer.
- Remove from the heat and immediately stir in the peanut butter and vanilla until the mixture is smooth and fully combined.
- Add the oats and stir until evenly coated and well mixed.
- Working quickly before the mixture begins to set, drop 1 tablespoon portions onto the prepared baking sheet using a cookie scoop or spoon. Gently flatten the tops with your fingers if desired.
- Chill in the refrigerator for 30 minutes, or until the cookies are firm and set.
Notes
- These cookies can be stored in an airtight container for up to one week.
- Make sure to use a candy thermometer for accurate temperature measurement.
