Description

Delicious no-bake cookies made with peanut butter and oats.


Ingredients

  • 8 tablespoons unsalted butter
  • 1 ½ cups granulated sugar
  • ½ cup whole milk
  • 1 cup creamy peanut butter (use a regular processed variety, not natural)
  • 1 tablespoon pure vanilla extract
  • 3 cups old-fashioned oats (quick oats also work)

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat and set aside.
  2. In a medium saucepan, combine the butter, sugar, and milk. Stir continuously over medium heat until the butter has melted and the mixture comes to a full boil.
  3. Once boiling, continue cooking for about 1 to 1½ minutes, or until the temperature reaches 220–225°F (104–107°C) on a candy thermometer.
  4. Remove from the heat and immediately stir in the peanut butter and vanilla until the mixture is smooth and fully combined.
  5. Add the oats and stir until evenly coated and well mixed.
  6. Working quickly before the mixture begins to set, drop 1 tablespoon portions onto the prepared baking sheet using a cookie scoop or spoon. Gently flatten the tops with your fingers if desired.
  7. Chill in the refrigerator for 30 minutes, or until the cookies are firm and set.
