Creamy Garlic Mushroom Chicken

Description

A delicious and creamy chicken dish with garlic and mushrooms, perfect for any dinner.


Ingredients

  • 4 thinly-cut chicken breasts
  • 1/3 cup all-purpose flour
  • Salt and pepper to taste
  • 2 Tablespoons olive oil
  • 2 Tablespoons butter
  • 16 oz mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 2 Tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/3 cup heavy cream
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season both sides of the chicken breasts with salt and pepper.
  2. Pour the flour into a plate or a shallow bowl, and lightly coat each piece of chicken. Shake off any excess flour.
  3. Heat a large skillet over high heat, then add the olive oil to the pan. Once hot, add the chicken and cook for 2-3 minutes on each side, until browned. Remove the meat from the pan and keep warm.
  4. Place the pan over medium-high heat and add the butter. When the butter is melted, add the mushrooms and cook for about 5 minutes, until they cook down and begin to soften.
  5. Add the garlic and sauté in the pan for 1-2 minutes, until you can smell the garlic.
  6. Put the flour in the skillet and stir it into the mushroom mixture until it’s no longer white.
  7. Slowly whisk in the chicken broth and the heavy cream. Once mixed, bring the sauce to a simmer and cook for about 5 minutes, until it starts to thicken.
  8. Add the Italian seasoning and stir it in, then add the chicken back to the skillet. Cook for a couple minutes until the meat is cooked all the way through.
  9. Season to taste with salt and pepper, then serve the chicken hot with the sauce poured over it. Garnish with fresh parsley or other herbs.
