Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups mixed fresh berries (blueberries, blackberries, raspberries)
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Whipped cream for garnish (optional)

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool while preparing the filling.
  2. Make the Cheesecake Filling: Beat the softened cream cheese in a large bowl until smooth. Add sugar gradually, mixing well. Mix in sour cream and vanilla extract. Add eggs one at a time, beating slowly until just combined. Pour the filling over the cooled crust in the springform pan.
  3. Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly open. Refrigerate for at least 4 hours, preferably overnight.
  4. Prepare the Mixed Berry Topping: In a saucepan, combine the mixed berries, water, sugar, and cornstarch. Cook over medium heat until the mixture thickens and becomes glossy. Stir in lemon juice and let it cool.
  5. Assemble and Serve: Once the cheesecake is chilled, spread the berry topping over the top. Decorate with additional fresh berries and whipped cream, if desired. Slice and serve chilled.

Notes

  • For a smooth filling, ensure the cream cheese is at room temperature.
  • Lay a sheet of aluminum foil on the bottom of the oven to catch any drips from the springform pan.
  • For easier slicing, dip a knife in hot water before cutting each slice.
  • You can substitute frozen berries if fresh ones aren’t available; just make sure to thaw and drain them first.
