- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups mixed fresh berries (blueberries, blackberries, raspberries)
- 1/2 cup water
- 1/2 cup sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- Whipped cream for garnish (optional)
Instructions
- Prepare the Crust: Preheat your oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool while preparing the filling.
- Make the Cheesecake Filling: Beat the softened cream cheese in a large bowl until smooth. Add sugar gradually, mixing well. Mix in sour cream and vanilla extract. Add eggs one at a time, beating slowly until just combined. Pour the filling over the cooled crust in the springform pan.
- Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly open. Refrigerate for at least 4 hours, preferably overnight.
- Prepare the Mixed Berry Topping: In a saucepan, combine the mixed berries, water, sugar, and cornstarch. Cook over medium heat until the mixture thickens and becomes glossy. Stir in lemon juice and let it cool.
- Assemble and Serve: Once the cheesecake is chilled, spread the berry topping over the top. Decorate with additional fresh berries and whipped cream, if desired. Slice and serve chilled.
Notes
- For a smooth filling, ensure the cream cheese is at room temperature.
- Lay a sheet of aluminum foil on the bottom of the oven to catch any drips from the springform pan.
- For easier slicing, dip a knife in hot water before cutting each slice.
- You can substitute frozen berries if fresh ones aren’t available; just make sure to thaw and drain them first.
