Description

A delicious dish featuring baked eggs with whipped feta, tomatoes, and spinach.


Ingredients

  • 1/2 cup feta cheese
  • 1 tablespoon heavy cream or Greek yogurt
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh spinach or chopped herbs
  • 2 teaspoons olive oil
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Lightly oil your ramekins or baking dish.
  2. In a bowl, whip the feta with cream or Greek yogurt until smooth and fluffy.
  3. Spread whipped feta into the dish. Add cherry tomatoes and spinach/herbs.
  4. Drizzle olive oil over the veggies, then gently crack eggs on top.
  5. Bake uncovered for 12–15 minutes or until egg whites are set and yolks are slightly runny.
  6. Sprinkle with black pepper. Serve hot with toasted bread or pita.
