A delicious dish featuring baked eggs with whipped feta, tomatoes, and spinach.
Ingredients

- 1/2 cup feta cheese
- 1 tablespoon heavy cream or Greek yogurt
- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh spinach or chopped herbs
- 2 teaspoons olive oil
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C). Lightly oil your ramekins or baking dish.
- In a bowl, whip the feta with cream or Greek yogurt until smooth and fluffy.
- Spread whipped feta into the dish. Add cherry tomatoes and spinach/herbs.
- Drizzle olive oil over the veggies, then gently crack eggs on top.
- Bake uncovered for 12–15 minutes or until egg whites are set and yolks are slightly runny.
- Sprinkle with black pepper. Serve hot with toasted bread or pita.
