Ingredients

  • 1 packet taco seasoning mix
  • 2 cups cheddar cheese, shredded
  • 3 cups tortilla chips, crushed
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup diced tomatoes
  • 1 green bell pepper, chopped
  • 1/2 cup sliced black olives
  • optional jalapeño slices
  • 1 cup lettuce, shredded
  • sour cream (for serving)
  • green onions, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Season the Beef: Add the taco seasoning mix and a little water (about 1/4 cup) to the beef. Stir well and let it simmer for a few minutes until the seasoning is fully incorporated.
  4. Layer the Ingredients: In a 9×13 inch baking dish, spread a layer of crushed tortilla chips on the bottom. Add half of the seasoned beef mixture, followed by half of the black beans, a layer of salsa, and a layer of shredded cheddar cheese. Repeat the layers with the remaining beef, beans, salsa, and cheese.
  5. Bake: Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Topping: Remove from the oven and top with diced tomatoes, chopped green bell pepper, sliced olives, jalapeño slices, and shredded lettuce.
  7. Serve: Serve hot with a dollop of sour cream on the side and garnish with chopped green onions.
