- 1 tablespoon olive oil
- 1 pound turkey sausage, casings removed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 2 cans white beans, drained and rinsed (15 ounces each / 425g each)
- 1 can diced tomatoes (14 ounces / 410g)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium heat. Add turkey sausage and cook until browned, breaking it into small pieces, about 5-7 minutes.
- Add onion, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in vegetable broth, white beans, diced tomatoes, oregano, and basil. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes to allow flavors to meld.
- Season with salt and pepper to taste.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Serve hot, optionally garnished with grated Parmesan cheese if desired.
Notes
- This soup can be easily customized with your choice of vegetables.
- For a spicier version, add red pepper flakes.
- Leftovers can be stored in the refrigerator for up to 3 days.
