- 2 cups sugar cookie dough (store-bought or homemade)
- 16 oz full-fat cream cheese, softened
- 1 cup sour cream
- 3/4 cup granulated sugar
- 2 tsp vanilla extract
- 3 large eggs (room temperature)
- 1/2 cup melted butter
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
- Press half of the sugar cookie dough into the bottom of the prepared pan evenly.
- In a large bowl, beat cream cheese until smooth, then mix in sour cream, sugar, vanilla extract, and eggs until combined.
- Pour half of the cheesecake mixture over the cookie base and layer remaining dough on top. Finish by pouring the rest of the cheesecake mixture.
- Bake for 50-60 minutes until edges are set but center is slightly jiggly; cool at room temperature then chill for at least four hours.
Notes
- This cheesecake can be served plain or topped with your favorite fruit or sauce.
- Make sure the cream cheese is softened for a smoother batter.
