- 1 pound boneless skinless chicken breasts
- 4 cloves fresh garlic, minced
- 8 ounces fettuccine or penne pasta
- 2–3 chipotle peppers in adobo sauce, chopped
- 1 cup heavy cream or 8 ounces cream cheese
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro (optional for garnish)
Instructions
- Prepare your ingredients by chopping the garlic and chicken into bite-sized pieces.
- In a large skillet over medium heat, heat olive oil and sauté the chicken until golden brown, about 5-7 minutes.
- Add minced garlic during the last minute of cooking until fragrant.
- Stir in chipotle peppers and cream (or cream cheese) until smooth; simmer for 3-5 minutes.
- Cook pasta according to package instructions; drain and add to the skillet, mixing thoroughly to coat in the sauce.
- Finish by adding grated Parmesan cheese; toss until creamy. Serve topped with fresh cilantro if desired.
Notes
- This dish can also be made with shrimp or vegetables instead of chicken.
- Adjust chipotle peppers to taste for desired spice level.
