Ingredients

  • 1 pound boneless skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 ounces fettuccine or penne pasta
  • 23 chipotle peppers in adobo sauce, chopped
  • 1 cup heavy cream or 8 ounces cream cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional for garnish)

Instructions

  1. Prepare your ingredients by chopping the garlic and chicken into bite-sized pieces.
  2. In a large skillet over medium heat, heat olive oil and sauté the chicken until golden brown, about 5-7 minutes.
  3. Add minced garlic during the last minute of cooking until fragrant.
  4. Stir in chipotle peppers and cream (or cream cheese) until smooth; simmer for 3-5 minutes.
  5. Cook pasta according to package instructions; drain and add to the skillet, mixing thoroughly to coat in the sauce.
  6. Finish by adding grated Parmesan cheese; toss until creamy. Serve topped with fresh cilantro if desired.
