A comforting dish featuring tender collard greens cooked with a smoked ham hock.

- 1 bunch collard greens
- 1 smoked ham hock
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1/2 tsp red pepper flakes
- 2 tablespoons olive oil
- Salt and Pepper to taste
Instructions
- Thoroughly wash the collard greens to remove grit. Remove tough stems and chop leaves into bite-sized pieces.
- In a large pot over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- Stir in the smoked ham hock and pour in the chicken broth. Bring to a gentle boil.
- Add collard greens and red pepper flakes; season with salt and pepper to taste. Reduce heat to low and cover.
- Simmer for about 45 minutes to 1 hour until the greens are tender.
Notes
- For more flavor, consider adding a splash of vinegar before serving.
