- 2 ¼ cups All-Purpose Flour
- 1 cup Unsalted Butter, very cold, cubed
- 1 cup Finely Grated Parmesan Cheese, freshly grated
- 2 tablespoons Fresh Rosemary, finely minced
- 1 teaspoon Fine Sea Salt
- ½ teaspoon Freshly Ground Black Pepper
- 1 large Egg Yolk (optional)
- 1–3 tablespoons Ice Water (as needed)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the all-purpose flour, Parmesan cheese, rosemary, sea salt, and black pepper.
- Add the cubed, cold unsalted butter and mix until the mixture resembles coarse crumbs.
- If using, stir in the egg yolk.
- Add ice water one tablespoon at a time, mixing until the dough comes together.
- Roll the dough into a log shape and refrigerate for at least 30 minutes.
- Slice the dough into rounds and place them on a baking sheet.
- Bake in the preheated oven for 15-20 minutes or until lightly golden.
- Let cool before serving.
Notes
- For an extra flavor boost, try adding garlic powder or crushed red pepper flakes.
- These cookies can be served as a snack or as an appetizer with dip.
