Description

Delicious savory cookies made with all-purpose flour, finely grated Parmesan cheese, and fresh rosemary.


Ingredients

  • 2 ¼ cups All-Purpose Flour
  • 1 cup Unsalted Butter, very cold, cubed
  • 1 cup Finely Grated Parmesan Cheese, freshly grated
  • 2 tablespoons Fresh Rosemary, finely minced
  • 1 teaspoon Fine Sea Salt
  • ½ teaspoon Freshly Ground Black Pepper
  • 1 large Egg Yolk (optional)
  • 13 tablespoons Ice Water (as needed)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the all-purpose flour, Parmesan cheese, rosemary, sea salt, and black pepper.
  3. Add the cubed, cold unsalted butter and mix until the mixture resembles coarse crumbs.
  4. If using, stir in the egg yolk.
  5. Add ice water one tablespoon at a time, mixing until the dough comes together.
  6. Roll the dough into a log shape and refrigerate for at least 30 minutes.
  7. Slice the dough into rounds and place them on a baking sheet.
  8. Bake in the preheated oven for 15-20 minutes or until lightly golden.
  9. Let cool before serving.

  • For an extra flavor boost, try adding garlic powder or crushed red pepper flakes.
