A delicious and easy shrimp and orzo pasta dish with fresh spinach, garlic, and lemon.

- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 pound large shrimp, deveined
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons extra virgin olive oil
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot, add orzo, and cook until al dente (about 8 minutes). Drain and set aside.
- In a skillet over medium heat, heat olive oil. Add minced garlic and cook until fragrant (about 30 seconds).
- Add shrimp to the skillet; season with salt and pepper. Cook until pink and opaque (3-4 minutes).
- Stir in fresh spinach until wilted (2-3 minutes).
- Pour in chicken broth and lemon juice; simmer gently for about 2 minutes. Fold in cooked orzo and sprinkle with Parmesan before serving.
Notes
- This dish can be served warm or at room temperature.
- Try adding other vegetables such as cherry tomatoes or bell peppers for added flavor.
