A delicious, classic pineapple upside-down cake with a caramelized topping.

- 1 can (20 oz) pineapple slices in juice
- 10 maraschino cherries (optional)
- 1/2 cup (1 stick) unsalted butter
- 1 cup packed brown sugar
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup milk
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Pan:
- Place the 1/2 cup of butter in a 9-inch round cake pan or bundt pan and melt it in the preheating oven.
- Once melted, sprinkle the brown sugar evenly over the butter.
- Arrange the pineapple slices on top of the brown sugar. Place a cherry in the center of each pineapple slice.
- Make the Cake Batter:
- In a medium mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Assemble the Cake: Carefully pour the batter over the pineapple slices and spread evenly.
- Bake: Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Invert: Allow the cake to cool in the pan on a wire rack for 5 minutes. Run a knife around the edges to loosen, then invert onto a serving platter. Let it sit with the pan still on for a few minutes, then remove the pan.
Notes
- Ensure the butter is completely melted before adding the brown sugar and pineapple slices.
- Do not overmix the cake batter to keep the texture light and fluffy.
- For extra flavor, you can use the pineapple juice instead of milk for the cake batter. Adjust the sugar accordingly if preferred less sweet.
- This cake is best served warm, optionally with a scoop of vanilla ice cream.
