Description

A delicious, classic pineapple upside-down cake with a caramelized topping.


Ingredients

  • 1 can (20 oz) pineapple slices in juice
  • 10 maraschino cherries (optional)
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup milk

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Pan:
    • Place the 1/2 cup of butter in a 9-inch round cake pan or bundt pan and melt it in the preheating oven.
    • Once melted, sprinkle the brown sugar evenly over the butter.
    • Arrange the pineapple slices on top of the brown sugar. Place a cherry in the center of each pineapple slice.
  3. Make the Cake Batter:
    • In a medium mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.
    • In a separate bowl, sift together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  4. Assemble the Cake: Carefully pour the batter over the pineapple slices and spread evenly.
  5. Bake: Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Cool and Invert: Allow the cake to cool in the pan on a wire rack for 5 minutes. Run a knife around the edges to loosen, then invert onto a serving platter. Let it sit with the pan still on for a few minutes, then remove the pan.

Notes

  • Ensure the butter is completely melted before adding the brown sugar and pineapple slices.
  • Do not overmix the cake batter to keep the texture light and fluffy.
  • For extra flavor, you can use the pineapple juice instead of milk for the cake batter. Adjust the sugar accordingly if preferred less sweet.
  • This cake is best served warm, optionally with a scoop of vanilla ice cream.
