Description

Deliciously grilled chicken breasts served with tender asparagus, finished with a squeeze of fresh lemon juice.


Ingredients

  • 4 pieces boneless, skinless chicken breasts (preferably uniform in size)
  • 1 bunch fresh asparagus (thin stalks preferred)
  • 2 tablespoons olive oil (extra virgin preferred)
  • to taste sea salt (plus extra for finishing)
  • to taste fresh black pepper (cracked fresh)
  • 1 lemon (for squeezing over before serving)
  • 2 cloves garlic (minced, optional)
  • 23 sprigs fresh thyme or rosemary (optional for added aroma)

Instructions

  1. Preheat your grill to medium-high heat, aiming for about 200°C (400°F), until it’s shimmering and hot.
  2. Pat the chicken breasts dry with paper towels, then brush lightly with olive oil on both sides. Season generously with salt and pepper, and sprinkle with minced garlic and herbs if using.
  3. Trim the woody ends off the asparagus and toss them in a bowl with olive oil, salt, and a squeeze of lemon to coat evenly.
  4. Place the chicken breasts on the hot grill, skin-side down if skin-on, and cook for about 6-7 minutes until they develop a deep golden-brown crust.
  5. Flip the chicken using tongs and continue grilling for another 6-7 minutes, checking for an internal temperature of 75°C (165°F). The chicken should be juicy and slightly charred on the outside.
  6. Once flipped, add the asparagus alongside or on a cooler part of the grill. Grill for 3-4 minutes, turning occasionally, until tender, bright green, and with some charred spots.
  7. Remove the chicken from the grill and let it rest for about 5 minutes, tented loosely with foil to keep it warm and juicy.
  8. Slice the rested chicken if desired, and arrange it on a serving plate alongside the grilled asparagus.
  9. Squeeze fresh lemon juice over the chicken and asparagus just before serving, then sprinkle with flaky sea salt for an added bright note.
