Description

A fresh, flavorful grilled chicken burrito bowl loaded with healthy ingredients.


Ingredients

  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lime juice
  • ½ teaspoon Paprika
  • ½ teaspoon Ground cumin
  • ¼ teaspoon Chili powder
  • ¼ teaspoon Garlic powder
  • ¼ teaspoon Onion powder
  • ¼ teaspoon Dried oregano
  • Pinch of salt and freshly ground black pepper, to taste
  • 2 Boneless, skinless chicken breasts
  • 1 cup Cooked brown rice
  • 1 tablespoon Lime juice
  • Small handful chopped cilantro, plus extra for garnish
  • 2 cups Mixed greens
  • ½ cup Black beans
  • ½ cup Canned corn, drained or grilled
  • ⅓ cup Cherry tomatoes, quartered
  • 1 Small avocado, sliced
  • 2 tablespoons Greek yogurt
  • ½ Red onion, diced
  • 1 Jalapeno pepper, sliced (plus chopped for garnish)
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. In a ziplock bag, combine olive oil, fresh lime juice, paprika, ground cumin, chili powder, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix thoroughly until well blended.
  2. Add the chicken breasts to the ziplock bag with the marinade, seal tightly, and shake to evenly coat the chicken. Allow to marinate for at least 15 minutes to absorb the flavors.
  3. Heat a grill pan or outdoor grill to medium-high heat. Place the marinated chicken breasts on the grill and cook for 5-7 minutes on each side, or until fully cooked and no longer pink inside.
  4. Remove chicken from the grill and let it rest for 5 minutes to retain juices. Then slice into strips or bite-sized pieces.
  5. In a small bowl, mix the cooked brown rice with lime juice, chopped cilantro, salt, and pepper. Toss to combine well and set aside.
  6. Divide mixed greens evenly into two bowls as the base. Add the sliced grilled chicken on top of the greens.
  7. Evenly distribute black beans, corn, cherry tomatoes, diced red onion, sliced avocado, and a dollop of Greek yogurt between the bowls.
  8. Sprinkle bowls with chopped cilantro and sliced jalapeno pepper. Serve immediately and enjoy your fresh, flavorful grilled chicken burrito bowl.
