A delicious ribeye steak served with a creamy Parmesan sauce.

- 2 boneless ribeye or sirloin steaks (about 1 inch thick)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 garlic cloves, minced
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning

- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ¼ teaspoon salt (for sauce)
- ¼ teaspoon black pepper (for sauce)
- ¼ teaspoon paprika (optional, for extra depth)
Instructions
- Prepare the Steaks: Start by bringing the steaks to room temperature. Pat them dry with a paper towel — this helps get that golden-brown crust. Season both sides generously with salt, pepper, and Italian seasoning.
- Sear the Steaks: Heat olive oil in a cast iron skillet or heavy pan over medium-high heat. Once hot, add the steaks and cook for 3–4 minutes on each side for medium-rare, or longer if you prefer them more done. During the last minute of cooking, add the butter and minced garlic to the pan. Spoon the melted garlic butter over the steaks for added flavor. Remove the steaks from the pan and let them rest.
- Make the Parmesan Cream Sauce: In the same pan, reduce heat to medium. Add 1 tablespoon of butter and minced garlic. Sauté for about 30 seconds until fragrant, then pour in the heavy cream. Let it simmer gently for 2–3 minutes, stirring frequently.
- Stir in the Cheese: Add the grated Parmesan cheese, salt, pepper, and paprika (if using). Stir until the cheese has fully melted and the sauce thickens slightly — about 3–4 minutes.
- Bring It All Together: Return the steaks to the pan or pour the sauce over the sliced steaks before serving. Garnish with a little extra Parmesan and freshly cracked pepper if you like.
Notes
- Letting the steaks rest after cooking helps to retain their juices.
- Use freshly grated Parmesan for the best flavor.
- The paprika is optional, but it adds nice flavor depth to the sauce.
