Description

These gooey Rolo brownies are an indulgent treat packed with chocolate and caramel flavors.


Ingredients

Scale
  • 1 cup butter (melted)
  • ¾ cup unsweetened natural cocoa powder
  • 1½ cups Rolo candies (unwrapped and chilled)
  • 1½ cups granulated sugar
  • ½ cup light brown sugar (packed)
  • 3 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (spooned and leveled)
  • ½ teaspoon salt
  • ½ cup salted caramel sauce or regular caramel sauce
  • ½ cup chopped Rolo candies
  • Flaky sea salt (optional and to taste)

Instructions

  1. Place 1 1/2 cups unwrapped Rolos in a bowl and chill in the fridge for 30-60 minutes before using to ensure they don’t melt while baking.
  2. Preheat oven to 350F and line a 9×9-inch baking pan with parchment paper leaving overhang. Spray well with cooking spray; set aside.
  3. In a medium, microwave-safe bowl, add the butter and heat on high power to melt, about 1 minute.
  4. Add the cocoa powder to the melted butter and whisk to incorporate until smooth.
  5. In a separate large bowl, add the sugars, eggs, and vanilla. Whisk vigorously for 2-3 minutes, or until pale and creamy looking.
  6. Gradually pour the cocoa-butter mixture into the sugar-egg mixture, whisking well to incorporate.
  7. Add the flour and salt, and using a rubber-tipped spatula, fold to incorporate until just combined. Do not overmix.
  8. Add the chilled Rolos and fold to incorporate.
  9. Turn batter out into the prepared baking pan and bake for about 42-50 minutes, or until as done as you desire.
  10. Allow the brownies to cool in the pan for about 10 to 15 minutes.
  11. Evenly sprinkle the halved Rolos, drizzle with caramel sauce, optionally sprinkle with sea salt, slice, and serve cooled and set.

Notes

  • These brownies are gooey and fudgy, best cooked until just done.
  • For cleaner cuts, wipe the knife blade between slices.
  • This brownie is not recommended to serve chilled as Rolos harden dramatically in the fridge.
