Description

Enjoy your delicious Festive Almond Fruit Cake!

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mixed dried fruits (cherries, raisins)
  • 1/2 cup almonds, whole and sliced
  • 1/2 cup candied oranges or mandarin segments
  • 1/4 cup orange juice
  • Zest of 1 orange
  • 1/4 cup milk
  • Additional almonds and cherries for topping (as desired)

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (160°C). Grease and line a round cake pan with parchment paper.

  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy. This should take about 3-5 minutes.

  3. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the orange juice and milk. Begin and end with the dry ingredients.

  6. Add Fruits and Zest: Fold in the mixed dried fruits, whole almonds, orange zest, and any additional ingredients like candied oranges.

  7. Pour Batter: Pour the batter into the prepared cake pan, smoothing the top with a spatula.

  8. Decorate: Arrange additional almonds and cherries on top of the batter.

  9. Bake: Bake in the preheated oven for 60–70 minutes, or until a toothpick inserted into the center comes out clean.

  10. Cool and Serve: Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Fruit Soak: If preferred, soak the dried fruits in the orange juice for a few hours or overnight for extra moisture.

  • Storage: Store the cake in an airtight container at room temperature for up to a week. It can also be frozen for longer storage.

  • Variations: Feel free to experiment with other nuts, like walnuts or pecans, and different dried fruits to add variety.
