Description

A delicious cherry chocolate roll cake perfect for any occasion.


Ingredients

Scale
  • 6 large eggs
  • 3/4 cup granulated sugar
  • 2/3 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 1/2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 2 tablespoons Kirsch (optional)
  • 1/4 cup dark chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar until thick and pale.
  3. Sift in flour, cocoa, and salt; gently fold to combine.
  4. Spread batter in pan and bake for 10-12 minutes.
  5. Turn cake onto a powdered-sugar-dusted towel and roll while warm. Cool completely.
  6. Beat cream, powdered sugar, and vanilla until stiff peaks form.
  7. Unroll cake, spread whipped cream, and layer with cherry filling. Add Kirsch if using.
  8. Re-roll the cake gently and decorate with more whipped cream, cherries, and chocolate shavings.
  9. Chill for 1 hour before slicing and serving.

Notes

  • This dessert can be made a day ahead and chilled in the refrigerator.
  • Feel free to substitute the cherry filling with other fruits.
