Description

A refreshing and delightful salad made with crushed pineapple, cranberry sauce, Cool Whip, and mini marshmallows.


Ingredients

  • 20 oz crushed pineapple (drained)
  • 14 oz cranberry sauce (jelly or whole berry)
  • 8 oz Cool Whip (thawed)
  • 2 cups mini marshmallows
  • lemon or orange zest (optional)
  • ¼ cup toasted pecans or walnuts (optional, crushed, for topping when served)

Instructions

  1. In a large bowl, thoroughly mix the well-drained 20 oz crushed pineapple and the canned 14 oz cranberry sauce.
  2. Gently fold the thawed 8 oz Cool Whip into the cranberry-pineapple mixture until just combined. Do not overmix to keep the texture airy.
  3. Stir in the 2 cups mini marshmallows and optional lemon or orange zest (if using).
  4. Cover and refrigerate for a minimum of 3-4 hours (6 hours or overnight is best) to allow the salad to set.
  5. Scoop into a serving dish and top with ¼ cup toasted pecans or walnuts (if using) just before serving.

Notes

  • This salad can be made a day in advance for better flavor.
