- 3–4 boneless, skinless chicken breasts
- 8 oz cream cheese (full-fat preferred)
- 2 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) fire-roasted diced tomatoes
- 2 bell peppers (any color), chopped
- 1 medium onion, chopped
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Tortilla chips or cornbread for serving
Instructions
- Place the boneless chicken breasts at the bottom of the crockpot.
- Layer chopped bell peppers and onions on top.
- Add black beans and diced tomatoes (with juices) to the pot; mix gently.
- Sprinkle chili powder, cumin, and garlic powder over the mixture.
- Pour in chicken broth and add blocks of cream cheese on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken shreds easily.
- Stir well before serving with shredded cheese or fresh cilantro.
