Ingredients

- 2 cups Glutinous Rice Flour
- 1/2 teaspoon Fine Salt
- 1 cup Boiling Water
- 1/4 cup Granulated Sugar
- 1 cup Sweetened Red Bean Paste
- 1 cup Raw White Sesame Seeds
- 4 cups Vegetable Oil
Instructions
- In a mixing bowl, combine glutinous rice flour and fine salt.
- In a heatproof cup, dissolve granulated sugar in boiling water.
- Gradually mix the hot sugar water into the flour mixture.
- Transfer the dough to a lightly floured surface and knead for about 2 minutes.
- Portion out tablespoon-sized pieces of dough, fill with sweetened red bean paste, and seal the edges.
- Roll each filled ball in raw white sesame seeds.
- Heat vegetable oil in a deep pan to 350°F and fry the Jian Dui in batches for about 6 minutes.
- Once fried, drain on a wire rack and serve warm or at room temperature.
Notes
- Ensure the water is boiling hot for the best results.
- You can substitute granulated sugar with coconut sugar or maple syrup if desired.
