- 1 package phyllo pastry sheets or spring roll wrappers
- 2 cups cheese (such as mozzarella, cheddar, or a mix)
- 2 tablespoons all-purpose flour
- water (to make a paste)

Instructions
- Prep the Cheese Filling: Grate or cut the cheese into small cubes. Mix with optional herbs and season with salt and pepper.
- Prepare the Glue Paste: In a small bowl, mix all-purpose flour and water to create a thick paste. This will be used to seal the samosas.
- Assemble the Samosas: Cut the phyllo pastry or wrappers into long strips (about 3 inches wide). Place a small amount of the cheese mixture at one end of the strip. Fold the pastry over the filling to form a triangle. Continue folding in a triangular pattern until the entire strip is wrapped. Seal the edges with the flour-water paste.
- Frying: Heat oil in a deep frying pan over medium heat. Once the oil is hot, fry the samosas in batches until they are golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.
Notes
- Ensure the oil is hot enough before frying to achieve a crispy exterior.
- If you prefer baking, brush the samosas with oil and bake at 375°F (190°C) for 15-20 minutes.
- Experiment with different cheese combinations for varied flavors.
- Serve with a dipping sauce like marinara or green chutney for extra flavor.
