A delicious and creamy recipe for lasagna roll-ups filled with shrimp and spinach.

- 12 sheets lasagna noodles
- 1 lb shrimp, peeled and deveined
- 3 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 2 tablespoons butter
- Fresh parsley, for garnish, chopped
- Salt, to taste
- Pepper, to taste
- Nutmeg, a pinch
Instructions
- Prep the Ingredients:
- Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on a baking sheet.
- Sauté shrimp in olive oil over medium heat until pink and opaque. Remove from the pan and set aside.
- Prepare the Filling:
- In the same pan, add a bit more olive oil and sauté garlic until fragrant.
- Add spinach and cook until wilted. Season with salt, pepper, and a pinch of nutmeg.
- In a bowl, combine ricotta, half of the mozzarella, spinach, and some of the sautéed shrimp (save a few for topping).
- Assemble the Roll-ups:
- Spread a layer of the ricotta mixture evenly over each lasagna noodle.
- Roll up each noodle and place in a greased baking dish seam side down.
- Make the Cream Sauce:
- In a saucepan, melt butter over medium heat.
- Add heavy cream and bring to a gentle simmer.
- Stir in remaining mozzarella and Parmesan until melted and smooth. Adjust seasoning as needed.
- Bake:
- Pour cream sauce over the lasagna roll-ups.
- Top with the remaining sautéed shrimp and extra Parmesan cheese.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until bubbly and golden.
- Garnish and Serve:
- Remove from oven and let cool slightly.
- Garnish with chopped parsley. Serve warm.

- You can substitute spinach with kale if preferred.
