Description

A delicious and creamy recipe for lasagna roll-ups filled with shrimp and spinach.


Ingredients

  • 12 sheets lasagna noodles
  • 1 lb shrimp, peeled and deveined
  • 3 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Fresh parsley, for garnish, chopped
  • Salt, to taste
  • Pepper, to taste
  • Nutmeg, a pinch

Instructions

  1. Prep the Ingredients:
  2. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on a baking sheet.
  3. Sauté shrimp in olive oil over medium heat until pink and opaque. Remove from the pan and set aside.
  4. Prepare the Filling:
  5. In the same pan, add a bit more olive oil and sauté garlic until fragrant.
  6. Add spinach and cook until wilted. Season with salt, pepper, and a pinch of nutmeg.
  7. In a bowl, combine ricotta, half of the mozzarella, spinach, and some of the sautéed shrimp (save a few for topping).
  8. Assemble the Roll-ups:
  9. Spread a layer of the ricotta mixture evenly over each lasagna noodle.
  10. Roll up each noodle and place in a greased baking dish seam side down.
  11. Make the Cream Sauce:
  12. In a saucepan, melt butter over medium heat.
  13. Add heavy cream and bring to a gentle simmer.
  14. Stir in remaining mozzarella and Parmesan until melted and smooth. Adjust seasoning as needed.
  15. Bake:
  16. Pour cream sauce over the lasagna roll-ups.
  17. Top with the remaining sautéed shrimp and extra Parmesan cheese.
  18. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until bubbly and golden.
  19. Garnish and Serve:
  20. Remove from oven and let cool slightly.
  21. Garnish with chopped parsley. Serve warm.
