Ingredients

- 8 oz fresh mushrooms (cremini or shiitake), sliced
- 4 oz Brie cheese, cubed
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1 tsp fresh thyme (or ½ tsp dried thyme)

- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Sauté the onions and garlic until translucent.
- Add sliced mushrooms and cook until golden brown, about 5-7 minutes.
- Pour in vegetable broth, bring to a simmer, and simmer for an additional 5 minutes.
- Optionally blend with an immersion blender for a smooth finish.
Notes
- For a dairy-free option, substitute the heavy cream with coconut milk.
- This soup can be garnished with fresh thyme or croutons if desired.
