Description

A delicious side dish or entree featuring fresh spinach cooked in creamy coconut milk.


Ingredients

  • 10 oz fresh spinach
  • 1 can (13 oz) full-fat coconut milk
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tbsp lime juice

Instructions

  1. Wash and coarsely chop the fresh spinach.
  2. Mince the garlic and dice the onion.
  3. In a large skillet over medium heat, add a splash of oil and sauté the onion until translucent, about 3 minutes. Add garlic and cook for another minute.
  4. Add the chopped spinach and stir until wilted, about 5 minutes.
  5. Pour in the coconut milk and stir to combine.
  6. Season with salt, pepper, and lime juice; simmer on low heat for an additional 5 minutes.
  7. Serve warm as a side dish or enjoy as an entree.
