Description
A refreshing cabbage and apple salad with a tangy dressing, perfect as a side dish.
Ingredients

- 1/2 head green cabbage (about 4 cups shredded)
- 2 medium apples (such as Granny Smith or Honeycrisp)
- 1/2 cup dried cranberries
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped walnuts (optional)
Instructions
- Shred the cabbage finely using a knife or mandoline slicer. Place in a large mixing bowl.
- Core and dice the apples into small pieces. Add to the bowl with the cabbage.
- Add the dried cranberries to the bowl.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
- Pour the dressing over the cabbage, apples, and cranberries. Toss well to coat everything evenly.
- If using, stir in the chopped walnuts.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.
Notes
- This salad can be made a few hours in advance to enhance the flavors.
- Optional: For additional crunch, consider adding sunflower seeds or pumpkin seeds.
