Description

A refreshing cabbage and apple salad with a tangy dressing, perfect as a side dish.


Ingredients

  • 1/2 head green cabbage (about 4 cups shredded)
  • 2 medium apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Shred the cabbage finely using a knife or mandoline slicer. Place in a large mixing bowl.
  2. Core and dice the apples into small pieces. Add to the bowl with the cabbage.
  3. Add the dried cranberries to the bowl.
  4. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  5. Pour the dressing over the cabbage, apples, and cranberries. Toss well to coat everything evenly.
  6. If using, stir in the chopped walnuts.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.

Notes

  • This salad can be made a few hours in advance to enhance the flavors.
  • Optional: For additional crunch, consider adding sunflower seeds or pumpkin seeds.
