This delicious pan-seared cod is paired with juicy cherry tomatoes and fresh basil for a flavorful meal.
Ingredients

- 4 fillets cod (about 6 ounces each)
- 1 tablespoon olive oil
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 cup fresh basil, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Pat the cod fillets dry and season both sides generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
- In the same skillet, add halved cherry tomatoes and cook for 2-3 minutes until they soften. Stir in minced garlic, oregano, and red pepper flakes (if using), cooking for an additional 2 minutes.
- Return the cod fillets to the skillet, spoon the tomato sauce over them, and heat together for another minute before serving with fresh basil and lemon juice.
Notes
- This dish pairs well with a side of rice or crusty bread.
- Feel free to add a pinch of red pepper flakes for some heat.
