Description

This delicious pan-seared cod is paired with juicy cherry tomatoes and fresh basil for a flavorful meal.


Ingredients

Scale
  • 4 fillets cod (about 6 ounces each)
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 cup fresh basil, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Pat the cod fillets dry and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add halved cherry tomatoes and cook for 2-3 minutes until they soften. Stir in minced garlic, oregano, and red pepper flakes (if using), cooking for an additional 2 minutes.
  4. Return the cod fillets to the skillet, spoon the tomato sauce over them, and heat together for another minute before serving with fresh basil and lemon juice.

  • Feel free to add a pinch of red pepper flakes for some heat.
