  • Total Time: 1 hour 20 minutes
  • Yield: Approximately 12 snowballs 1x
  • Diet: Vegetarian

Description

A delightful and easy-to-make dessert that combines shredded coconut and creamy goodness.

Ingredients

Scale
  • 2 cups sweetened shredded coconut
  • 1 cup condensed milk
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • A pinch of salt
  • White chocolate pearls or similar decorative topping (optional)
  • Parchment paper

Instructions

  1. Prepare the Mixture: In a mixing bowl, combine the condensed milk, almond flour, vanilla extract, and a pinch of salt. Stir until well mixed.
  2. Form the Snowballs: Using your hands, scoop small amounts of the mixture and roll them into balls, roughly 1 inch in diameter. You should have about 12 balls.
  3. Coat with Coconut: Spread the shredded coconut on a plate. Roll each ball in the coconut until fully covered. Press gently to ensure the coconut adheres well.
  4. Chill: Place the coconut-covered balls on a tray lined with parchment paper. Chill in the refrigerator for at least 1 hour to set.
  5. Decorate: Once chilled, optionally place a white chocolate pearl on top of each snowball for decoration.

Notes

  • If the mixture is too sticky when forming the balls, slightly dampen your hands with water.
  • For added flavor, you can toast the coconut in a dry skillet over medium heat until golden before using it to coat the snowballs.
  • These desserts can be stored in an airtight container in the refrigerator for up to one week.
  • If desired, substitute almond flour with ground nuts such as almonds or walnuts for a different texture.
