Description

This delicious chia pudding combines the rich flavor of cocoa with the natural sweetness of maple syrup, perfect for a healthy dessert or breakfast.


Ingredients

  • 2 tablespoons unsweetened cocoa powder (or Cacao powder)
  • 2 tablespoons maple syrup (plus more to taste)
  • 1 teaspoon vanilla extract
  • 1β…“ cup coconut milk (see notes)
  • ΒΌ cup chia seeds

Instructions

  1. Add the cocoa powder, maple syrup (or another sweetener), and vanilla extract to a bowl or jar and mix well to combine.
  2. Whisk the milk in with the cocoa powder mixture until smooth.
  3. Finally, add the chia seeds and mix well. Some chia seeds will clump together – that’s normal.
  4. Allow the mixture to sit at room temperature for about 5 minutes and mix again.
  5. Continue to mix until there are no longer any large clumps.
  6. Cover the bowl or jar and transfer it to the refrigerator.
  7. Refrigerate for at least 2-4 hours (overnight is even better).
  8. Remove from the refrigerator and mix well before topping with yogurt, fresh fruits, nuts, seeds, granola, nut butter, or jam.

Notes

  • For a creamier texture, use full-fat coconut milk.
  • You can adjust the sweetness by adding more maple syrup if desired.
