Description

A delicious and hearty chicken chili made with colorful bell peppers and aromatic spices.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups colorful bell peppers (1 red, 1 yellow, 1 green), sliced
  • 1 medium sweet onion, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • Juice of 1 lime
  • Optional: Fresh cilantro for garnish

Instructions

  1. Cut the chicken into bite-sized pieces for even cooking.
  2. In a large pot over medium heat, add olive oil and sauté the onions and garlic until fragrant (about 5 minutes).
  3. Add sliced bell peppers along with cumin and chili powder; cook for an additional 3-4 minutes.
  4. Pour in the chicken broth and add the seasoned chicken. Bring to a boil, then reduce to a simmer for about 20 minutes until the chicken is cooked through.
  5. Stir in fresh lime juice and adjust seasoning if needed.
  6. Serve hot, garnished with cilantro if desired.
