- 1 lb boneless, skinless chicken breasts
- 2 cups colorful bell peppers (1 red, 1 yellow, 1 green), sliced
- 1 medium sweet onion, thinly sliced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp smoked paprika
- Juice of 1 lime
- Optional: Fresh cilantro for garnish
Instructions
- Cut the chicken into bite-sized pieces for even cooking.
- In a large pot over medium heat, add olive oil and sauté the onions and garlic until fragrant (about 5 minutes).
- Add sliced bell peppers along with cumin and chili powder; cook for an additional 3-4 minutes.
- Pour in the chicken broth and add the seasoned chicken. Bring to a boil, then reduce to a simmer for about 20 minutes until the chicken is cooked through.
- Stir in fresh lime juice and adjust seasoning if needed.
- Serve hot, garnished with cilantro if desired.
