Description

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded cheddar cheese
  • 1 can (10 oz) enchilada sauce
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1/2 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional for heat)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Shrimp: In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until onion is translucent. Add shrimp, jalapeño, salt, and pepper; cook until shrimp is pink and cooked through, about 4-5 minutes. Remove from heat and stir in 1/2 cup of Monterey Jack cheese.
  3. Prepare Sauce: In a bowl, mix enchilada sauce with sour cream until smooth.
  4. Assemble Enchiladas: Spoon shrimp mixture evenly onto each tortilla. Roll up tortillas and place seam side down in a greased baking dish.
  5. Add Cheese and Sauce: Pour the sauce mixture over the enchiladas. Sprinkle remaining Monterey Jack and cheddar cheese over the top.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  7. Garnish: Sprinkle chopped cilantro over the enchiladas before serving.

  • For even more flavor, try adding a teaspoon of chili powder or cumin to the shrimp when cooking.
