- 1 lb (450g) shrimp, peeled and deveined
- 8 flour tortillas
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded cheddar cheese
- 1 can (10 oz) enchilada sauce
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup sour cream
- 1/2 cup chopped cilantro
- 1 jalapeño, seeded and minced (optional for heat)
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Shrimp: In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until onion is translucent. Add shrimp, jalapeño, salt, and pepper; cook until shrimp is pink and cooked through, about 4-5 minutes. Remove from heat and stir in 1/2 cup of Monterey Jack cheese.
- Prepare Sauce: In a bowl, mix enchilada sauce with sour cream until smooth.
- Assemble Enchiladas: Spoon shrimp mixture evenly onto each tortilla. Roll up tortillas and place seam side down in a greased baking dish.
- Add Cheese and Sauce: Pour the sauce mixture over the enchiladas. Sprinkle remaining Monterey Jack and cheddar cheese over the top.
- Bake: Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Garnish: Sprinkle chopped cilantro over the enchiladas before serving.
Notes
- For even more flavor, try adding a teaspoon of chili powder or cumin to the shrimp when cooking.
- To ensure the tortillas don’t crack, you can lightly heat them in a dry skillet before filling.
- If you’d like a creamier sauce, consider adding a touch more sour cream.
